How to Cook a New York Strip Steak

New York Strip Steak is one of the tastiest cuts of meat there is. A New York Strip is the larger part of a t-bone steak. A traditional New York Steak still has the bone in, but the T part of the bone and the tenderloin (the small part) is cut off. A strip is with the bone removed (ie, the bone has been "stripped" out), so it is just the meat. There are many various opinions on how a cut of meat should be cooked. This article will discuss how to cook a New York strip steak the right way.


The first step, of course, is to buy your meat. Buying meat by mail order is a very popular and convenient way of buying meat. I myself have had no problem with any meat I bought via mail order, and the quality was always high. Next, you'll want to season the meat, but not too much. A New York strip steak has plenty of flavor on it's own, so don't ruin it by adding too much seasoning.

Next, you'll need to marinate the steak in the seasoning. There are some who recommend letting it set at room temperature for about half an hour, and some who say to let it marinate in the fridge. I personally, due to my experience with cooking and safe food handling, never let meat set out too long. Use your own judgement with this step. The point is to let the seasonings soak into the New York strip steak so the flavors go all through the meat.

Next, fire up your grill. Never cook a steak in the oven. It won't come out right. You can also use one of the newer appliances like the George Foreman grill or one of my favorite ways, is using the Nu Wave oven. Now, cook your steak. I prefer mine medium rare, but you can go as much as medium well with a New York strip steak. Well done will make it way too tough. Be sure to flip the steak only once, no matter how done you want it. A good rule of thumb is to let it cook for 2 1/2 minutes on the first side, then flip it. How long it cooks on the second side will depend on how done you want it.

Now this is the tricky part. When is it done? Make a fist with one hand and tuck your thumb inside you fist. If you squeeze tight and then press on the muscle at the base of your thumb it will be pretty hard. This is well done. If you let your hand go limp and press the muscle, this is rare. If you find a middle tension, this is medium. Find medium-rare and medium-well respectively. If this is too much to remember, use a meat thermometer. Steak is medium at 160 degrees.
